Chili Recipe

This recipe taste just like Wendy's chili from the fast food restaurant. I remember Grandma Lil eating chili baked potatoes all the time at the bowling alley in Rapid .

You can adjust the spices as you wish.

2 lbs. fresh ground beef
1 qt. tomato juice
1 (29 oz.) can tomato puree
1 (15 oz.) can red beans, drained
1 medium onion (1 1/2 c.), chopped
1/2 cup celery, diced
1/4 cup chili powder
1 tsp. cumin (if you like real flavor, add more)
1 1/2 tsp. garlic powder
1 tsp. salt
1/2 tsp. black pepper
1/2 tsp. oregano
1/2 tsp. sugar
1/8 tsp. cayenne pepper

In a frying pan, brown the ground beef; drain. Put the drained beef and the remaining ingredients into a 6-quart pot. Cover the pot; let it simmer for 1 to 1 1/2 hours, stirring every 15 minutes.

Sage Stuffing

Day before, cube 1 loaf of white bread and let dry

8-9 stalks of celery, chopped
1 yellow onion or dried onion
1 tbsp. sage
1 tbsp. margarine
3 cans of cream of celery soup
salt and pepper to taste
Add bread last and mix

Spray glass pan with Pam (or 11x15) Cook at 375 for 45 minutes covered in tin foil. uncover and cook 15 minutes or until stuffing starts to pull away form edge of pan.

Stove Top Baked Beans

Another one of Grandma Lil's recipes

1 bag great northern or pea beans
Wash and sort as always a few not wanted. Add enough water to cover and simmer til almost done. water would have cooked down by then but not dry. Add 1 diced onion, 1/2 cup of brown sugar, enough molasses for color you want, 1/4 cup ketchup, salt and pepper. Simmer til done and flavor blended. Add crumbled bacon halfway done.

Burger N Green Bean Casserole

I know this sounds a little weird, but trust me it is so good. Will add a picture next time I make it.

2 lbs. hamburger
1 c. chopped onions
2 cans tomato soup
garlic salt to taste
2 cans green beans drained
2 tubes refrigerated biscuits
1 c. shredded chedder cheese

Cook beef and onions until done, drain. In a bowl mix the soup and garlic salt. Blend in green beans and hamburger. Pour into 13x9 inch pan. Cook uncovered at 350 for 20 minutes. Remove form oven and stir. Place biscuits on top of casserole, sides touching. Bake an additional 12-15 minutes until biscuits are lighly browned. Sprinkle with the cheese and let sit a few minutes til cheese melts.

Easy Coffee Cake


1/2 c. packed brown sugar
2 tbsp. cinnamon
2 tbsp. flour
2 tbsp. oil
1/2 c chopped pecans


2 eggs, beaten
1 c.sugar
2 c. flour
4 tsp. baking powder
1 tsp. salt
1 c. milk
1/4 c. oil


Combine first 5 ingredients in bowl, mix well and set aside. Beat eggs and sugar in mixing bowl until smooth. Add mixture of flour,baking powder,and salt alternately with milk, mixing well after each addition. Add oil and mix well. Spoon into greased 9x13 inch baking pan. Sprinkle with brown sugar mixture. Bake at 375 for 20 to 25 minutes or until coffee cake tests done.

Chicken Pot Pie

1 pound skinless, boneless chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk

2 (9 inch) unbaked pie crusts

Preheat oven to 425 degrees F (220 degrees C.)
In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

Banana Bread

All right, my wonderful husband loves to eat bananas, but no matter what size the bunch is that I buy, there are ALWAYS 3 bananas sitting on my counter that are too brown to eat. No problem, good thing I love banana bread! This recipe makes a very moist and dense bread.

3 large ripe bananas
1 cup sugar
1 egg
4 tablespoons butter or margarine,Melted and cooled
1&1/2 cups flour (I used whole wheat and didn't notice any negative difference)
1 teaspoon salt
1 teaspoon baking soda

Preheat over to 325 degrees, lightly grease a 9x5 inch Loaf pan; set aside. In a bowl, mash bananas. you should have 1 cup. Beat in sugar,then egg and butter. In another bowl, stir together flour, salt and baking soda; add to banana mixture and stir just until all flour is moistened. Pour batter into prepared pan. Bake for 55 to 60 minutes or until wooden tooth pick is inserted and comes out clean.

Cream of Chicken and Wild Rice Soup



This is hands down my favorite soup of all time! If you want, you can use a rotisserie chicken from the grocery store. Heck! I've even made it with turkey legs! Everybody who tries it loves it, and when I make it, even though it fills my huge stock pot I usually eat the whole pot in a week. It works very well for freezing. All that I do for freezing is put it in the Ziploc "cups" with the screw on caps.

Cream of Chicken and Wild Rice Soup
1 pkg of Chicken Wings
1 Package of Shredded Carrots
4 Ribs of Celery
1 Small Onion, minced
2 Cups Half&Half
3 Cups Grated Cheese
1&1/2 Cups Uncooked Wild Rice
6 tbls Butter
6 tbls Flour
Chicken Bullion to taste

Cut the little meatless part off the chicken wings and then wash them off. Put them in a stock pot full of water. Add a bunch of salt, chicken bullion, carrots, celery, and onions. Cover and boil for about 1 &1/2 hours or until the skin on the chicken starts to split. Remove from the pot and allow to cool.While this is boiling cook wild rice according to package directions.After chicken has cooked remove skin and remove meat from bone and put in the soup. Add half and half.In a frying pan melt butter and flour until smooth and add to bubbling soup. Then add 3 big handfuls of grated cheese of your choice. Let that melt and then eat it all.

Steve's grandma's breakfast muffins

This is a recipe we got from Steve's grandma. We made it one year and gave them as Christmas presents. We put the batter into mason jars and printed up the baking directions and put them on the jars. So if you want to make this I am warning you that it makes alot of muffins. But they are so good.

Pour 2 cups boiling water over 2 cups shredded wheat. Let cool.

Creme 3 cups sugar, 1 cup oleo, and 4 eggs

Add 1 quart buttermilk to creamed mixture.

sift 5 cups flour, 5 tsp baking soda, 2 tsp. salt add dry ingredients and stir, add 3 cups all bran buds, 1 cup grape nuts, and soaked shredded wheat.

Bake at 400 for 20 minutes in greased muffin pan

Keeps in fridge for up tp 6 weeks.

Grandma's stovetop rice pudding


1/2 cup hard rice
1/4 tsp.salt
1/4 cup sugar
2 1/2 cups milk
1 tsp. vanilla
Combine in large enough sauce pan. Simmer over med heat for 30 minutes. 5 minutes before done, add 1/2 cup raisins and 2 egg yolks mixed with 1/2 cup milk. As it cools, it may need more milk.
I made this up today I didn't have any raisins, so in the picture I took that is why you don't see any raisins. I think it turned out really well for the first time I made it. Will make again and this time add raisins.

Grandma's meatloaf

1 pound of hamburger
1 egg
6 soda crackers
salt and pepper to taste
onion

Make your mix a little soupy, not stiff

Mix above into hamburger (squish with fingers). Put into unsprayed meatloaf pan. Put some ketchup on top and sprinkle with cheese. Bake at 400 degrees for 15 minutes and then turn down to 375 for 30 minutes. When it's Nice and brown on top, it's done.

Impossible Turkey Pie

This is the way I received the recipe from Mom

2 cups of cut up turkey (or chicken)
1 1/2 cups of dried onions
1/2 tsp. salt
1 1/2 cups of shredded cheese
1 1/2 cups of milk
3/4 cups of Bisquick baking mix
3 eggs
1/4 cup of peas

Remember it was what Judy always wanted. Grease pie pan (glass). Sprinkle turkey (or chicken), onions,salt,and cheese in pie plate. Beat remaining ingredients until smooth. (15 sec in blender or 1 min hand blender). Pour into plate. Bake til knife inserted in center comes out clean. Cool 5 minutes. serves 6-8. I like also adding peas to turkey mix. Cook at 375 for an hour.

I remember going to Rapid and asking grandma to make this for me as soon a I walked in the door. It was funny she always had everything she needed on hand. Wonder why :)
