Ham 'N Cheese Calzones


1 can (13.8oz) refrigerated pizza crust

16 slices Oscar Mayer shaved honey ham

1 cup shredded colby and monterey jack cheese

1/4 cup ranch dressing

1 tomato, cut into 8 thin slices


Heat oven to 400. Unroll pizza dough on lightly floured surface. Pat out dough to form 16x12 inch recangle. Cut into quarters. ( I used a pizza cutter to cut the dough)

Top dough with ham to within 1/2" of sides. Mix cheese and dressing; spread on ham. Top with tomatoes. Fold each rectangle in half; seal edges with fork. Put on baking sheet sprayed with cooking spray.

Bake 16 to 18 min. or until golden brown.
NOTE---THIS BATCH MAKES 4 CALZONES. MAY WANT TO DOUBLE OR TRIPLE.

Flour Tortillas

4 cups white or whole wheat flour or half each
1-1/2 teaspoons salt
1-1/2 teaspoons baking powder (optional)
1/3 cup shortening
1 to 1-1/4 cups water
Waxed paper
oil (optional)

In a large bowl combine the flour, salt and baking powder. I prefer to use the baking powder because it makes the tortillas lighter, even if you roll them a little thick. The baking powder is not an authentic addition though, rather it is a southern mutation. Next cut in the shortening with a fork. When the flour is crumbly, add the water. Stir the dough with your fork until it makes a cohesive ball of dough. You may need to add an extra small spoonful of water if the dough is too dry. Be careful not to add too much though. When the dough forms a ball, knead it about 20 times. Then let it rest in the bowl for about 10 minutes. After it has rested, form it into 10 or 12 equal balls. Roll each ball in a little flour, to coat the outside of it evenly. Place a ball of dough on a sheet of waxed paper, or a clean, well floured surface. Roll the dough out into a a 6 or 7-inch circle. Try to get it as thin as you can. Loosen the tortilla from the rolling surface. Flop it onto a dry, hot skillet. Cook about 30 seconds, until the under side is dry, with a few brown spots. Flip it and cook the other side the same way. Transfer the cooked tortilla to a plate, and cook the next one.
This goes pretty fast after you get the hang of it. You can roll out all of the tortillas first, in one stage, and then cook them all in the second stage. After you practice it some, the whole procedure takes less than 20 minutes, and the tortillas are sooo good. Use them the same way you would store-bought tortillas: burritos, soft tacos, etc.The first few times you make these, you will need 30 to 40 minutes for the whole procedure. It takes time and practice to get the hang of rolling them out quickly and into a roughly circular shape. Please persevere. This recipe will save you $1 to $1.50 every time you make them. Also, if you don't have access to the store, you can still have lovely Mexican dishes all the same.
Homemade tortillas are not as flexible as store-bought tortillas. To make them more flexible, place them in a plastic bag while still warm, and let them cool right there in the bag. The steam will make them more pliable, and easier to roll up into fancy burrito shapes. This recipe makes about a dozen tortillas.

NOTE--I didn't use the wax paper, thought it was too much of a pain in the butt. Just make sure your surface has plenty of flour on it. And when you roll them out and they are not a perfect circle, who cares, it will still work.

One Dish Chicken Bake

1 lb. chicken breast (skinless, boneless)
1 can cream soup
1 box stuffing
1 T butter
1/4 c boiling water
shredded cheese(optional)

Prepare a 9x13 casserole dish with cooking spray. Mix Milk and soup throughly in bottom of dish, place chicken in soup mixture, mixture should cover chicken just slightly. In a seprate bowl mix water and butter gradually with stuffing mix, stir until moist, spread stuffing over chicken.
Cover with aluminum foil. Bake at 350 for 30 minutes or until chicken is done. Remove foi and add cheese if desired. Allow cheese to melt before serving.


I made this last night and I doubled it and put it in a 9x13 baking pan and it turned out fine, I baked it for an hour to make sure the chicken was done. It is just like the Campbells supper bakes only cheaper.

Chili Recipe

This recipe taste just like Wendy's chili from the fast food restaurant. I remember Grandma Lil eating chili baked potatoes all the time at the bowling alley in Rapid .

You can adjust the spices as you wish.

2 lbs. fresh ground beef
1 qt. tomato juice
1 (29 oz.) can tomato puree
1 (15 oz.) can red beans, drained
1 medium onion (1 1/2 c.), chopped
1/2 cup celery, diced
1/4 cup chili powder
1 tsp. cumin (if you like real flavor, add more)
1 1/2 tsp. garlic powder
1 tsp. salt
1/2 tsp. black pepper
1/2 tsp. oregano
1/2 tsp. sugar
1/8 tsp. cayenne pepper

In a frying pan, brown the ground beef; drain. Put the drained beef and the remaining ingredients into a 6-quart pot. Cover the pot; let it simmer for 1 to 1 1/2 hours, stirring every 15 minutes.

Sage Stuffing

Day before, cube 1 loaf of white bread and let dry

8-9 stalks of celery, chopped
1 yellow onion or dried onion
1 tbsp. sage
1 tbsp. margarine
3 cans of cream of celery soup
salt and pepper to taste
Add bread last and mix

Spray glass pan with Pam (or 11x15) Cook at 375 for 45 minutes covered in tin foil. uncover and cook 15 minutes or until stuffing starts to pull away form edge of pan.

Stove Top Baked Beans

Another one of Grandma Lil's recipes

1 bag great northern or pea beans
Wash and sort as always a few not wanted. Add enough water to cover and simmer til almost done. water would have cooked down by then but not dry. Add 1 diced onion, 1/2 cup of brown sugar, enough molasses for color you want, 1/4 cup ketchup, salt and pepper. Simmer til done and flavor blended. Add crumbled bacon halfway done.

Burger N Green Bean Casserole

I know this sounds a little weird, but trust me it is so good. Will add a picture next time I make it.

2 lbs. hamburger
1 c. chopped onions
2 cans tomato soup
garlic salt to taste
2 cans green beans drained
2 tubes refrigerated biscuits
1 c. shredded chedder cheese

Cook beef and onions until done, drain. In a bowl mix the soup and garlic salt. Blend in green beans and hamburger. Pour into 13x9 inch pan. Cook uncovered at 350 for 20 minutes. Remove form oven and stir. Place biscuits on top of casserole, sides touching. Bake an additional 12-15 minutes until biscuits are lighly browned. Sprinkle with the cheese and let sit a few minutes til cheese melts.
